One afternoon in my kitchen, working on my buttercream roses skill.
**what is it with me and afternoons?**
I remember the first time I took cake decorating class. The class was taught by my baking guru, Fatmah Bahalwan, back in 2004. She instructed the class to start working on the roses, and I didn’t do so. When she inspected the class and found me doing nothing but staring at the flower nail with frowns on my rebellion face, she asked, “Riana, where are your roses?” I said, rebelliously, “I didn’t make any. I don’t like roses.” Since then, she acclaimed me as the baddest student she ever had. I love you, mbak Fat 😀
Until one day in the beginning of 2008, I was forced by the obligation to teach 1-day cake decorating class. I had nowhere to run. Nowhere to hide. I had to face my fear. Buttercream roses.
I‘m glad I made it in one piece, and keep my sanity. **well, okay, not all of it**

This is my first time doing beach themed cake, so.. well, wad’you expect 🙂 A lot of mess, but a lot to learn as well. All in all, I was satisfied with the learning experience I went through. The cake itself, I’m not 😦

There are so many recipes of buttercream icing, just pick one of your favorites and you’re good to go. My favorite is the one using Hollman Soft Cream, beaten up together with vegetable shortening, sweet condensed milk, milk powder and a few drops of flavoring. The Soft Cream is the secret ingredient. It gives the buttercream milky mellow taste, featherlight fluffy texture that melts in your mouth just like ice cream.
Resep ini menghasilkan kurang lebih 3 kg buttercream. Jadi kalo butuhnya kurang dari itu, tinggal disesuaikan aja jumlah resepnya, misalnya 1/3 atau 1/2 resep.

1000 gr Hollman Soft Cream
1000 gr mentega putih
750 gr gula buttercream/susu kental manis
50 susu bubuk full cream
50 cc rhum butter cream Toffieco (optional)
- Kocok semua bahan menjadi satu kecuali susu bubuk fullcream, kurang lebih 15 menit.
- Masukkan susu bubuk full cream sambil diayak, kocok kembali kurang lebih 10 menit sampai mengembang dan halus.
- Buttercream siap dipakai.
- Hollman Soft Cream akan mengembang volumenya menjadi dua kali lipat setelah dikocok.
